Hey!  What's going on?  There are people visiting here?!?!  What craziness is this!

Hello!  Nice to meet you new people, I suppose that new explore LJ thing really works!

I haven't added to this much lately :( forgive me.  I've got a food blog at Wanna Green Bean.com.  I suppose if people will be visiting here too, I might just have to add stuff!

Pinwheel Sandwiches


Large Flour Tortillas (10-11 inch)

Spread Options:
Softened Cream Cheese
Sour Cream
Salad Dressing

Filling Options:
Deli Turkey
Deli Ham
Shredded Cheese


(Needs finetuning)

4 oz ground beef (or turkey)
1/4 tsp minced garlic
1/2 tsp vegetable oil
2 tbsp chopped onion
1 1/2 tbsp diced green pepper
1 small tomato
1/8 tsp ground cumin
3/4 tsp salt
1 tsp chili powder
dash of cayenne pepper
3 tbsp water
1 8-oz can kidney beans

1.  Put oil, garlic, onion, and green pepper into a medium sized bowl.  Cook  2 minutes on high.
2.  Add the ground beef to the bowl and mix carefully.  Cook 1 minute and 30 seconds on high.  Break up ground beef with a fork.
3.  Cut the tomato into 1/2 inch cubes and add to bowl.  Add the spices and water and mix well.

English Muffin Pizza

1 english muffin
3 tbsp pizza sauce
1/4 c mozzarella cheese

1.  Slice the muffin in half and toast.
2.  Top each side of the english muffin with 1/2 the sauce, 1/2 the cheese and a few pepperoni's
3.  Microwave for 30 seconds on high.  If cheese is not melted, microwave again in 15 minute increments until cheese is melted.

Scrambled Eggs

1 large egg
2 tsp milk
1/2 tsp butter

1.  Break egg into a bowl, and add the milk.  Beat with a fork until the yolk is broken and the mixture is a uniform yellow color.
2.  Cook 45 seconds minute on high, until all but a spoonful of egg is cooked.
3.  Break egg up with a new clean fork, and microwave, again for another 15-20 seconds, until all the egg is cooked.
4.  Stir again with a fork and serve.

Cinnamon Toast

Sliced bread
1 tbsp butter, softened
1 tsp sugar
cinnamon, to taste

1.  Toast bread
2.  While the bread is toasting mix together the butter, sugar and cinnamon.  Tub margarine works well for this.
3.  Spread cinnamon butter on toasted bread.

Chicken Buffalo Wings

3 tbsp reduced-calorie butter
1/2 15oz can sloppy joe sauce
1/4 c mild hot pepper sauce
2 lb small chicken drumsticks (about 8), skin removed

In a really big bowl (about 2 qt) melt the butter in the microwave.  Mix in the sloppy joe sauce and hot sauce.

Put the drumsticks in the dish alternating ends so that some fat ends and some thin ends of the drumsticks are at the edges of the dish.  Spoon the sauce all over.  

Microwave 3-5 minutes.  Turn the sticks around.  Spoon the sauce from the bottom of the dish, back ontop of the drumsticks.  

Microwave for another 3-5 minutes, or until the juicy run clear when you stab a drumstick with a fork.  Set aside for 5 minutes (important!) the meat will continue to cook.

Serve with blue cheese or ranch dressing.

Microwave Lasagna

Miss your Mom's homemade lasanga?  Need something for a specail dinner and all you have to cook with is a microwave?   Don't despair!

2 tbsp grated parmesan cheese
1 small 8 oz container ricotta or cottage cheese
1/4 c shredded mozzarella cheese
1 egg
a pinch of salt
1 tbsp finely chopped parsley
Jarred tomato sauce
uncooked lasagna noodles
extra shredded mozzarella cheese for topping

Mix together the parmesan, ricotta, and mozzarella cheese.  Add the egg, salt and parsley and mix well.  Set aside.

For each 1/4 c of sauce you use add 1 tbsp water.  This water is added to help cook the lasagna noodles.

Pour enough sauce into the dish to lightly cover the bottom of the dish.  
Top with uncooked lasagna noodles to cover in a single layer.  
Spread part of the cheese filling over the uncooked noodles.  
Pour more tomato sauce ontop of the cheese filling.  

Repeat with more layers, noodle, cheese, then sauce, until the dish is full or you run out of ingredients, ending with a sauce layer.

Cover the dish with saran wrap and microwave for 4 minutes on high (rotating halfway through, if your microwave doesn't automatically turn the dish).  Cook another 15 minutes at 40% power (again, rotating every few minutes if your microwaves doesn't automatically turn the dish).  In the last few minutes of cooking you can top with some extra shredded mozarella cheese for a melted cheesy top (take the saran wrap off for the last few minutes if you decide to do this).

Check for doneness by sticking a fork in it (or a knife).  If the fork goes through the layers easily, it is done.  If there is a little bit of resistance, or you can't get the fork through at all, it is not done.

Boiling Noodles in the Microwave

Boiling noodles in a microwave is much like cooking noodles on a stove, but without the pot.

You will only need a few simple supplies to do this.  The main cooking utensil is a really big bowl.  Pick a bowl that will fit at least 4 cups of water, or the biggest size that will fit in your microwave.  Make sure the bowl is sturdy and microwave safe.  A tupperware bowl will work, a styrofoam bowl will not, glass is great, but is heavy.

You will also need hot pads or hot gloves, the bowl will be hot when you take it out of the microwave.  One handy thing to do is grab your hot pad, or put on your hot gloves, then put plastic baggies over top of those.  Nothing hurts more then getting hot water on your heating pad.  Not only is your pad wet and hot, all the heat from the bowl now rushes right through it to your hand! 

Fill the bowl up from 1/2-3/4 of the way full with water, add a pinch of salt (important!).  Set it in the microwave and cook 3-6 minutes until boiling.  Watch the water carefully, one cup of water should boil in about two minutes.  

Boiling water in the microwave can be tricky.  If your water is too clean, it will get to the boiling point, but not actually bubble and boil.  This can cause the water to explode.  Its not really dangerous but is a pain to clean up (I know from experience).  If it has been microwaving for a few minutes and nothing is happeneing and it should be, carefully open the microwave and poke at it with a long fork or spoon to get the water moving around.  The addition of the salt should keep this from happening, but just in case.

Once the water is boiling, turn off the microwave and carefully remove the bowl from the microwave.  Add the pasta being careful to make sure the water doesn't get too close to the top of the bowl, or spill over.

Place the bowl back in the microwave and cook for another 5 minutes or so.  Check the pasta for doneness every few minutes.  It should still be a little firm, chewy but not crispy, soft but not mush.


"Wait! I dont have a collander (bowl with holes) or a sink!"

See this post for tips if you don't have a sink in your room, or easy access to one.

If you dont have a collander get those plastic baggied oven-mitts back out and a spare plate.

Set the plate ontop of the bowl so it seals around the top of the bowl, sometimes you have to put the bottom of the plate towards the inside of the bowl.  Slide the plate so there is a small hole between the edges of the plate and bowl, and carefully pour off the extra water.

You have now made pasta in the microwave!


1/2-1 c of your favorite cereal
1/4-1/2 c of milk

Pour cereal into a bowl.
Pour milk on top.
